Okay, I tried this cake at a restaurant and it was seriously the most delicious cake I have ever eaten. When I asked for the recipe all I got was “the white cake came from a mix”. I was shocked and elated at the same time. I am not the best baker to say the least and I felt one step closer to a dessert I could make. I needed to think and absorb every flavor that came in contact with my happy tongue. This was a light, fresh, fluffy cake. It was not too sweet and could have been set before me in any fine establishment. Well people I did it. Because I created the recipe as I went along I will put down as close as what i know the measurements were. If you are a hardcore baker…make the white cake too and poach the pears. I have always been a fan of Duncan Heinz but I know that a well made cake surely must be better (thought that still needs to be proven to me).
Hmmm…what to call it?
Pear Compote Dream Cake-or “the cake that was so great it could not be named”. So we just call it X.
Make the white cake according to package directions (tee hee)
A can of pears reserving the juice. Put the pears and some of the juice into a pot and simmer.
Add a bit of cinnamon.
Add a bit of lemon juice.
And a tiny bit of butter.
While that is bubbling away and reducing (by about half). Toast some nuts. I used pecans but you can use any nuts you have. Now, if you are like me this toasting of the nuts requires your absolute full attention (intentional use of the word “nuts” repeatedly). I have burned so many nuts that i could swear right now. When the sauce is reduced by half add the nuts.
Let that sit while you make whip cream. Whip it til its nice and fluffy. You can also buy real whip cream from the can if you so desire (see how easy this can be).
Put some caramel on the stove or in the microwave for drizzling. I used the kind they sell at Starbucks.

Assembly time.
Put cake on the plate, pour some nice pear compote over the top, dollop some whip cream on top (I use an icing bag to put the whip cream on top). Finally drizzle with caramel.
Be ready for your guests or family to pass out right on the floor from the uncontainable force of tastiness that seems to consume the mind and soul.
