Almost Flourless Chocolate Cake

OMG. OMG.OMG.  This is probably the best and only home made chocolate cake that I really and truly love.  It was passed on to me by a friend who makes it for just about any special occasion that happens at her house.  What I love about this cake is that it is simple but tastes like you could be eating it at any fine restaurant.  Last night I went to bed craving chocolate cake, and I really am not normally a dessert person.  I woke up tonight thinking about this cake.  I actually called my husband last night to stop by an ABC restaurant and pick me up one of those brownie, ice-cream, gooey fudgy chocolate cakes, but we have no ABC restaurant that I know of anywhere near where we live.  So, he picked me up an Arrow bar and I was left with only the dream of biting into a moist and chocolaty piece of cake.  Since, it is now 2:14 in the morning and I am still thinking about that damn cake, I will content my deep craving by posting her recipe of this taste treat extravaganza.

Best Flour-less chocolate cake (print recipe)

6 oz bittersweet chocolate
4 oz semisweet chocolate
1 c sugar
1 c unsalted butter
5 large eggs
5 tbsp flour (ok so there’s a tiny bit)
1.5 tsp baking powder

Preheat oven to 325, and flour a 10? springform pan
Melt chocolate and butter over low heat, stir, remove from heat
Beat eggs and sugar for 4-5 min
Sift flour and baking powder over egg mixture and fold in with spatula, then fold in chocolate mixture.
Pour in prepared pan
Bake for 20 min, then cover with foil and bake for 30 min more.
Cool and serve with globs of whipped cream!

This looks so wonderful. With the way the top looks so shiny and crumbly like a brownie, it could almost be called a brownie cake or pie, etc. I suppose it does have a little less flour even than a brownie though…

  16. a slightly confused baker says:

Uh, the recipe is kind of confusing…:p Maybe you should’ve just made the cake instead of trying to put it online at 2am…to use a tablespoon and a half of “baking flour” and a “10?” pan…lol well despite that I tried to be open minded and try the recipe anyway at the last minute because I just found out it’s my neighbors’ anniversary and I wanted to make a nice rich cake (but not completely flourless as I didn’t have quite enough chocolate, plus I like to use very good quality chocolate in something like that). I omitted the sugar because I used fully- and semi-sweet chocolate and upon tasting the batter, found the existing sugar content to be sufficient. I used a little less flour, and instead of 5 eggs, I used 3 eggs and 3 yolks. I’m pleasantly surprised that it has seemed to turn out well considering all the changes I made, but I’m still not sure how it tastes (they’ll probably get back to me tomorrow), but I hope it’s not like browneish or something, if it is it’s probably something I did to it, lol..anyway I’ll def use this recipe again and next time I’ll follow it exactly to give it a more fair appraisal. Thanks! :)

I know it looks insane but that is all the flour you need. Give it a try.

I’m going to make this cake, I had it at a friends birthday party, and it was drizzled with Dulce le leche melted with chocolate and served with vanilla icecream, OMG..
