The great thing about summer for me is that I get to eat fresh veggies and herbs from my little gardens. This morning I put them to good use to make this egg on toast extravaganza with goat cheese arugula and chives. Yum. I must say it was a great way to start the morning. Now, if the sun would just shine for us, I think the day could be close to perfect. Actually, it is only 1:35 in the afternoon, the kids haven’t got home from school yet…perhaps I say that prematurely.
