I have a philosophy about food, especially food that involves your kids. In a world of perfectionism, we often think that to do something, you need to do it right. That is true for many things but I don’t believe it is always true for cooking. Sometimes this notion of doing it right or not doing it at all hinders us from doing anything at all in the kitchen. Cooking with kids, creating food and traditions leaves lasting memories and your kids do not care if you made it from scratch or bought everything pre-made. If doing something perfect is preventing you from having a blast with your kids, it is time to shake loose that idea. I would like to present to you, Halloween Monster Cupcakes.
.

Here is the oh so complicated recipe:
1 box of Duncan Hines Cake Mix
2 tubs of White Duncan Hines Icing
1 pkg of Neon food coloring (can be found at any grocery store)
1 pkg of mini marshmallows for eyes
any assortment of candy that you want to dump on a cupcake
plastic zip-lock bags for the decorating
some random icing tips that are laying around your house-or they sell icing tubes with fancy tips at Michaels and Superstore. I had only one and that created the fur for the monsters.
Make cake according to package directions. Let cool.
Add as many colors of icing as you want by simply portioning out the icing and adding the food coloring.
Make a small slit in the corner of the zip lock bag for decorating. You can press the tip right into that slit or just use the tiny hole you made for decorating as is.

Let you kids go nutters and have fun.

I made the Frankenstein and Dracula cupcakes…perhaps I feel a little proud of myself. Thomas made one that he said was so scared that his eyeballs popped right out….can you find it?
