Fresh Minted Green Pea Puree
This dish will make you very happy. It is a delightful side to any protien. I served it along with a nice baked sablefish. I wish I had taken pictures of the meal together. The pea puree is light, and incredibly fresh tasting. It is like spring on a plate!!
Ingredients
- 2 cups fresh or frozen spring green peas
- 4 tablespoons heavy cream
- 14 fresh mint leaves, finely chopped
- pinch of sugar
- salt
- white pepper
Directions
- Bring a pot of salted water to a boil. Cook peas in boiling water for 1 ½ – 2 minutes. Strain & plunge into ice water to stop cooking process & keep that vibrant green color. Drain. In a food processor or blender puree green peas with heavy cream, and mint leaves. Season with sugar & salt & pepper. Adjust seasoning & refrigerate until ready to use. You may make this as thin or as thick as you want depending on how you are plating.
