Marshmallow Mermaid Pie-The Waitress

One of my favorite movies is ‘The Waitress” with Keri Russell.  There was not much buzz about it back in 2007 but if you are a lover of pie, it is a MUST see.  This movie has inspired me to cook from my gut and from who I am.  There are a whole list of pies she makes in the movie, some with a recipe and some without one.  I made the pie she invented when she was 9 years old (in her mermaid phase).  The doctor she gives it to called it “biblically” good.  So, the kids and I got together to make what we think could be the pie.  Here is a list of her other pies she makes that she invents as she goes through the struggles of her life.  I need to make a ‘be kind to yourself always pie’.  In fact, I may invent that one this weekend.  Oh, and I have more thoughts on pie and pie crust here.

Marshmallow Mermaid Pie

18 graham crackers
1 Cup sweetened, flaked coconut, toasted
5 ounces butter melted

2-250g bags of mini marshmallows (8 oz)-the colored ones are fun too.
1/2 Cup whole milk
1-1/2 whipping cream
1 ounce. unsweetened chocolate, grated

rainbow sprinkles optional

Pre-heat oven to 375 degrees.

Combine coconut and graham crackers in food processor until coarse crumbs
form. Combine crumbs and butter with fork.

Press to bottom and side of 9-inch pie plate.  Make sure you press the crumbs up the side of the dish, mine would have looked much better if I had.

Bake 10 minutes and cool on wire rack.

Heat 1 bag of marshmallows and milk in 3-qt. saucepan over low heat until smooth,
stirring constantly. Remove saucepan from heat. Cool completely (30
minutes.)

In large bowl with mixer at medium speed, beat cream until stiff peaks form.
Fold marshmallow mixture into whipped cream with grated chocolate.

Spoon filling into cooled crust. Top with mini marshmallows (from the 2nd bag) and rainbow
sprinkles.Refrigerate pie at least 3 hours or
overnight. Top with mini marshmallows and rainbow
sprinkles.
