The first time I ever had Buttermilk pie was about 6 months ago at a friends dinner party. One of the guest went to the Savory Island Pie company and brought this masterpiece along. I cannot believe it now, but I was about to pass on it when I was told I must try this pie. Never one to miss out on a taste treat sensation I got myself a piece. What happened after that first bite was pure magic. There were so many flavors that I was not expecting, the main one being lemon zest layered in a creamy custard like filling. I was shocked that this pie has alluded me my whole life. I did some searching, tried a few formulas and got this baby. You must try it if your hesitant and I am sure it will make a believer out of you.

Preheat the oven to 350 degrees F. In a large mixing bowl, combine the sugar, flour, and lemon zest. Whisk in the eggs, 1 at a time. Stir in the buttermilk and melted butter. Pour the buttermilk mixture into the pie shell and bake until the top is lightly browned and the center sets, about 25 minutes. Remove from the oven and cool to room temperature. Slice the pie into individual servings. Garnish with the whipped cream and mint.
