Today I making a quick and easy butternut squash soup. The reason this one is easy is because I bought the butternut squash pre-cubed and frozen. I have made it many different ways but today I want to show how easy it is to make instead of buying expensive cartons of it pre- made at the store. I have learned that cutting corners takes a good, healthy stab at my perfectionism. There were times when I thought about making soup for my family and then decided I didn’t have time to make it the right way. How silly is that? Foregoing soup for chicken fingers because I couldn’t do the soup properly. Well, that’s in the past. Here is a healthy soup for the fam that takes minutes.
3-4 cups butternut squash cubed
11/2 tbs. butter
1 onion chopped
2 garlic cloves minced
1 tbs fresh thyme if you have. Or use 1/2 tsp dry.
Pinch of all spice
Bigger pinch of cumin
4 cups of chicken stock
Salt and pepper to taste


Combine the first 7 ingredients in a pan and sauté til everything is soft and smells yummy.
Add the chicken stock and boil in a pot for 10 min.
Use a hand blender to puree it all together, or purée in a food processor. Adjust seasonings to your liking.
Add some cream if you like it creamier.
DONE. Enjoy. You can make this with the quick and easy salad from my last post. Delightful dinner or lunch.

This might sound like a stupid question but is that squash raw or cooked before you cube it and add it.
Not a stupid question. It is raw. You can also use it cooked…both ways are great.
