This recipe is from Ketchikan- the “Salmon Capital of the World”. This recipe is so simple but so good. The mayonnaise gets a nice golden crust. Even people who are not fans of salmon love this one!
Spray baking dish with non-stick canned oil. Put fillet in pan, skin side down. Salt and
pepper lightly. Spread mayonnaise over fillet, salt and pepper. Place onion slices on top
and squeeze fresh lemon over top. Pour your favorite wine in the bottom of the pan and cover. Bake at 350 For approximately 20-30 minutes or until salmon flakes.
*You can skip the wine and just bake it on a tray as is. That is what i do most of the time.
