Sweet Couscous

Put 1 cup into a saucepan with 3 teaspoons honey and 2 cups boiling water. Cover and cook over low heat for 5 minutes, or until all the liquid has been absorbed. Fluff the couscous with a fork, then cover again and remove from heat. Allow to sit for 10 minutes, then add ½ teaspoon ground cinnamon, 1 teaspoon finely grated orange zest, 3 tablespoons currants and 3 tablespoons tasted flaked almonds. Toss to combine and serve with yogurt.

Note: I actually use fresh berries instead of currants, and although it’s a bit of a hassle the orange rind makes it, so try and do it. This is one of the most delicious things I’ve eaten, it’s great to eat before a morning workout because there’s not milk. (the yogurt is optional) and it’s incredibly cheap and healthy.
